Carrot Ginger Soup with Your Blender

Carrot Ginger Soup is not only a delicious treat for your family on a cold winter evening but also very nourishing and easy to make. All you need are some simple ingredients, a little bit of preparation and let your trusty best blender of this year to do difficult part for you. It will take less than half an hour to bring this delicious meal to the table.



Here are the steps you need to follow to make homemade carrot ginger soup:

Ingredients:

  • Butter, 3 Tbsp

  • Carrots, 6 to 7 large peeled and chopped

  • Onion, 2 cups, chopped

  • Salt, as desired

  • Ginger, 1 tsp, chopped

  • Chicken stock or vegetable stock, 2 cups

  • Water, 2 cups

  • Heavy whipping cream, ½ cup

  • Parsley, chopped for garnish


Method:

  1. Melt butter in a large pot and sauté the onions and carrot until the onions become soft stirring at intervals. Sprinkle salt over the vegetables.

  2. Add chicken stock, water and ginger to the pot. You can also use vegetable stock in place of chicken stock if you want to. Cover the pot and let the mixture cook for about 20 minutes or until the carrots become soft.

  3. Immerse the immersion blender in the pot and puree the ingredients. Make sure there are no lumps or solid ingredients remaining. Keep blending until you get a smooth mixture.

  4. In case you don’t have an immersion blender, you will have to wait for the ingredients to cool and then transfer them to the jug blender. After you blend the ingredients, transfer them back to the pot and reheat.

  5. Taste the soup and add more salt if desired. You can also add other flavorings like pepper if you like.

  6. Turn the flame to low heat and add heavy whipping cream. Stir well to emulsify the cream among the other ingredients.

  7. Transfer the soup to serving bowls and garnish with chopped parsley before serving.

Suggestions:

You can also roast the carrots in a preheated oven before using it in the recipe to give a nice toasty flavor to your carrot ginger soup. Place the carrots on an oiled baking dish and drizzle with olive oil. Sprinkle salt and pepper over it. Roast them in the oven for around 45 minutes or until the carrots have browned in spots.
